SDH Institute Lecturers
Mr Clarence Lua is an associate food and beverage lecturer with SDH Institute since 2015.His training experience began in Singapore Hotel and Tourism Education College (SHATEC) in 2000 – 2007, managing the commercial training western restaurant, practical training and development of students, marketing of the restaurant, sales budgeting and managing ministries events and outside catering. He was further responsible for training students participating in the Dream Team during Food and Hotel Asia 2004, local bartending competitions like Bacardi Grand Prix and the annual National Bartenders Competition. In 2015 and 2016 National Cocktail Competitions, he led SDH Institute to finish top three positions. Prior to teaching, his industry experience includes Country Manna Restaurant, Sakae Sushi, Singapore Island Country Club, Allson Hotel, Jack’s Place as well as the pioneer team responsible for the opening of The Grand Copthorne Waterfront Hotel where he was involved in training, management and operations of the coffee house, banquet, poolside and beverage department.
Mr Lua holds a Bachelor of Hospitality Management from Edith Cowan University, Australia. He further holds an Advanced Diploma in Commerce, a Diploma in Business Administration from IBMEC College, National Trade Certificate Grade 3 in Food & Beverage Service, NITEC Certificate Grade 2 in Food & Beverage Operation from SHATEC, Certificate in Wines & Spirits from the UK Wines & Spirits Trust, Certificate in Bar Management from SHATEC and Coaching and Instructional Skills Certification from Institute of Technical Education. He also holds a WSQ Conduct Competency-Based Assessment in Food Hygiene Course.
Presently, he is teaching Food and Beverage related modules as well as conducting practical training in the Training Restaurant.
